Metro Kitchen opened its doors to the public on October 7th, 2024, at 5 pm, marking the culmination of months of meticulous planning and preparation. The restaurant's menu is a carefully curated blend of classic Indian dishes, infused with regional specialties, offering diners a taste of both the familiar and the unexpected. From flavorful curries to aromatic biryanis, each dish is crafted with high-quality ingredients, traditional techniques, and a commitment to authenticity.
Ajayan Vijayan - Our Sous chef
Ajayan Vijayan, our talented Sous Chef at Metro Kitchen, brings a wealth of experience and passion for Indian cuisine. With a degree in Hotel Management, Ajayan has spent over a decade perfecting his craft across various esteemed hotels and resorts.
Ajayan's most recent role was with Rotana Hotels & Resorts in Dubai, where he served as a Demi Chef de Partie (DCDP) for six years, honing his skills in a fast-paced, high-standard environment. Prior to that, he served as a Sous Chef at Le Pondy Beach Resort in Pondicherry, renowned for its exquisite seafood and authentic Indian flavors. Ajayan also spent three years as the Main Chef at the prestigious Taj Hotels in Mangalore and four years in Bangalore, building a reputation for culinary creativity and excellence.
Ajayan began his culinary journey with Casino Air Caterers & Flight Services in Kochi, where he first discovered his passion for creating flavorful and memorable dishes. His extensive experience, both locally and internationally, and commitment to delivering high-quality, authentic Indian cuisine make him a valuable part of our team at Metro Kitchen.
